Will there be much of a trajectory difference between S200 and S300?

No really none at all. In a frequency machine there is a 2 cpm difference between the S200 and S300 and with a Dynamic Gold there are 15 cpm's between and R300 and S300. The shafts are sorted by weight and an S200 weights 2 grams less then an S300.

I'm looking for a steal stiff senior shaft. swing speed about 90, my age 60, hdcp 9.5 someone recommended the Dynamic gold 50 gram stiff shaft. would agree or is there another shaft you would recommend. my irons are GC16 from Cleveland golf. $$ Bode

I am not sure what you mean by "stiff senior flex". If you mean a Senior flex that plays stiffer then normal that could be done. There is no Dynamic Gold 50 gram weight shaft, it does not exist. These days there are not many senior flex steel shafts available. In True Temper we have the Multi-Step (TT0061) L/A flex. The A flex is senior flex and it could be trimmed to play a little stiffer. In FST steel shafts we have the FST 90 (FS0011) A/R, FST 115 (FS0112), & FST Pro 115 Stepless (FS0013). All these shafts will fit the Cleveland CG16 irons.

If I cut a S300 40 inch shaft down to a 38.5 inch shaft, would it be the same as a bought 38.5 inch? I need a 38.5 and already have a extra 40. Thanks

No they will not play the same. The 40" would play more flexible by almost a full flex if it were cut to 38.5". The 40" shafts is the 3 iron shaft and designed to flex and bend with a 3 iron clubhead weight on the end. A 3 iron head weight is in the 340 gram range. The 38.5" shaft is the 6 iron shaft and designed to flex and bend with a 6 iron weight on the end. A 6 iron head weight is in the 261 gram weight range. If you put the 6 iron clubhead on the 3 iron shaft the heavier clubhead weight will make this shaft play more flexible.

I have these shafts in the S300 model for my irons but want a lower ball flight. Would switching to the X100 model give me the desired trajectory of the face of the club?

A stiffer flex shaft will generally hit the ball a little lower. I hard to say if it will give you your desired trajectory. You may need to consider, if you have not already done so, adjusting the lofts of your irons a little stronger.

Interested in replacing the shafts in my Mizuno MX23's. Currently I have 6.0 rifle shafts and seemed to have lost distance with age. What do you recommend as a replacement.

If the weight of the shafts seems to still fit you then you might want to drop to the 5.0 Project X (TRPXISET). If you are looking for a lighter weight shaft a shaft like the Dynamic Gold SL (TT2016) could work well. Mizuno has been using some of the True Temper XP 95 (TT0101), 105 (TT0102) and 115 (TT0112) shafts in some of their current models. The KBS Tour 105 (FS0041) has also become a pretty popular light weight choice.

I'm replacing kbs tour reg 355 taper in my pings..the kbs regular plays a little to stiff.  Should I soft step the tru temper 355's to get a softer feel than the kbs? Or do the TT'S play softer w/o soft stepping?

The Dynamic Gold R300 does test more flexible then the KBS Tour R flex. It tests more flexible then what you would achieve it you soft stepped once. I would think you could install them as is and be fine.
