I am interested in the True Temper GS85 .370 shafts. Since they are parallel tip, why do they come in specific lengths already. I thought parallel tip shafts comes in one length and you have to tip and butt trim for which ever iron you need.

The GS85 is an older model that we have not carried since about 2012. You can have .370 tip shafts in discrete lengths, just like taper tip shafts. When you have .370 tip shafts in varying lengths, you do not tip trim them, just like the .355. You would simply install and then cut to final plaing length from the butt end. One of the reasons companies might design a discrete length .370 tip shaft is to offer it in a constant weight product.

GS85 Parallel TIP R300 SHAFTS I am building a 6 club set and would like the flex to be "A". If I use the 3 iron shaft in the 5 iron would this work or what flex might it be.

Yes soft stepping 2 clubs like this should put you right on an A flex based on the way True Temper progressed the stiffness of these shafts.
